Wild Meatloaf

1 Lb Wild Boar

1 Lb Wild Sheep
2 Large Eggs
1/2 Medium Green bell pepper
1/2 Medium Red bell pepper
1/2 Small Yellow onion
2 oz Shiitake mushroom
1 Tablespoon Kosher Sea Salt (or salt to taste)
1 Tablespoon Ground Black Pepper
1 Tablespoons Garlic powder
1/2 Tablespoon Paprika
2 Cups Panko Bread Crumbs
8 oz Marinara
6 Strips Thin Cut Bacon

Preheat oven to 375.

Mix all ingredients except marinara and bacon thoroughly.

Line the bottom of a large, traditional meatloaf pan with your bacon strips. This will add flavor, and help to keep your meatloaf from sticking to the bottom of the pan.

Place meatloaf in the pan and then cover with a thick layer of marinara.

Bake at 375 for approximately 1 hour. This time may vary from 45 minutes to 1 hour and 15 minutes depending on the size and depth of your pan.

Serve immediately.


This dish goes great with the same sides your momma used to serve with her traditional meatloaf. You can’t go wrong with bacon and cheddar mashed potatoes, corn, green beans, or carrots.

Packed full of flavors that are accented by the natural smoky and woodsy tastes of the shitake mushrooms paprika, and your wild game meat, try pairing a nice merlot or pinot noir to take things from wonderful to simply outstanding.
